Oct. 20th, 2010 08:48 pmIf you don't want to gain weight, or if you're a comfort eater and have recently had distressing news ::cough::ravenecho::cough::, then you probably don't want to follow the fake cut.
First, I made something I think I'm going to call Diablo Garlic Bread for dinner.
1/3 cup margarine or butter (if you use butter, use salted and leave out the sale below)
1/4 - 1/2 tsp. salt (to taste)
1/4 tsp fresh ground black pepper
1 tsp garlic powder (increase if you're not using a bread with garlic in it)
1/2 - 3/4 Tbsp red pepper flakes (to taste)
1 Tbsp dried oregano
1/2 cup shredded Parmesan cheese
1/2- 1 loaf of (Roasted) Garlic bread - or any good, crusty loaf, like sourdough, French or Italian
Preheat oven to 400F.
Combine first seven ingredients in a small bowl until smooth.
Slice bread (if not already sliced).
Spread margarine mixture on both sides of each slice.
Place buttered slices back together to take loaf shape and place on foil, sealing bread into foil.
Place foil-wrapped bread in oven. For warm bread, bake for 20-25 minutes. For crispy, slightly crunchy bread, bake for 45 minutes to 1 hour.
Remove and eat.

And then a friend of mine sent me the recipe for theseApple-Cardamom Cakes with Apple Cider icing, so I sent her the recipe for my favorite pumpkin-chocolate chip cookies. (Which are amazing, even if they do look a little like solidified cat puke.)
3 1/2 cups whole wheat flour (sometimes I take out another 1/2 cup flour and
substitute 1/2 cup soy protein powder)
1/2 cup flax meal
2 cups oatmeal
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cups apple sauce
1/2 cup turbinado sugar
2 cups brown sugar
1 tsp vanilla
1 15 ounce can pumpkin
1 bag chocolate chips
Combine flour, flax meal, oatmeal, spices, and salt. Set aside.
Cream apple sauce, sugars, and vanilla on medium speed of mixer for 2 minutes.
Add the remaining flour and pumpkin alternately. Stir in chocolate chips.
Drop by rounded teaspoonfuls onto lightly greased sheet baking sheets.
Bake at 350F for 15-20 minutes or until firm and lightly browned.
Makes about 5 dozen cookies.

And then someone I don't particularly like but I'm still friends with on Facebook posted this on a mutual friend's Wall, which made me incredibly happy: Jeni's Splendid Ice Creams to open Cleveland Location. What's so awesome about it? Well, Jeni's Splendid Ice Creams are not only gourmet and locally sourced, they're also just really freaking good.
